Marinated Mushrooms

It is very easy to make. These Mushrooms are nice accompaniment to a variety of meals, and it is great addition to antipasto platter.
Leave mushrooms overnight to enhance the flavor even more. These can be made ahead of time and stored in the refrigerator for up to two weeks.

1 lb button mushrooms
1/4 cup grape seed oil ( any oil will work)
1/4 cup white vinegar
1/2 cup water
1 shallot
3-4 garlic cloves
3-4 bay leave
4 dry chilli (or 1 ts chilli flakes)
1 tsp coriander seeds
10 black pepper corns
10 cloves
1/2 cup dill
2 tbs sea salt
1 tsp sugar

1. Slice all ingredients, except mushrooms, leave them whole.

2. Combine all ingredients in a stockpot

3. Bring to a boil over medium-high heat.
3. Reduce heat to minimum .

4. Simmer it covered for 5 minutes.
5. Taste and adjust the seasoning.(to reduce acidity or saltiness add more boiled water)
6. Let it cool to room temperature.
7. Refrigerate for at least 2 hours.

Serve as an appetizer or garnish.

Серега, добрый мой приятель,
Нам в офис пафы приволок,
Народ слетелся словно к бою,
Гостинцы рвали кто как мог.

Я пафы ел, чего-же боле?
Чего еще могу сказать?
Воздушность вкуса поневоле
Меня заставила мечтать...
