Savory Cheese Puffs

Nice little appetizers. They can be sliced in half and filled with any salad or cheese spread. They make  beautiful and delicious sandwiches.








1 cup water
1 cup flour
1 stick (113g) unsalted butter
1/2 tsp black pepper
1/4 tsp nutmeg
1 tsp sea salt (I added truffle sea salt)
4 eggs
1/4 cup gruyere cheese
1/4 cup cheddar cheese
1/4 cup wallnuts
3 stems thyme

1. Preheat oven to 400 degrees F.





2. Combine the water, butter, pepper, nutmeg and salt in a saucepan over high heat and bring to boil.



3. Add flour.



4. Stir quickly.



5. Stir until the dough begins to come away from the sides of the pan, approximately 1-2 minutes.





6. Keep stirring until all flour is mixed in and dough forms a ball.





7. Move dough into the bowl; let cool for 5 minutes.



8. Add the eggs, one at a time, and mix well .



9. Make sure each egg is fully incorporated before adding another.



10. Finally, add  walnuts, cheeses and thyme.



11. Continue mixing for 1 more minute.



12. After all eggs are mixed in and dough is smooth, put the dough into a corner of  ziplock bag.



13. Twist



14. Line aluminum baking sheet with silicon pad or parchment paper.
15. Cut 1/2 inch hole.



16. Pipe 1 inch size round shapes, 1 inch apart on sheet pan. They will get much larger and they will need room.





17. Wet a finger and smooth any points or they may burn.



18. Bake at 400F about 20 minutes



Do not open the oven under any circumstances, or else they will fall down







19. Then reduce the heat to 375 degrees and continue baking the puffs until cooked through, about another 15 minutes.

Happy to hear that. You are so welcome! It doesn't take much time. It takes up to 10 minutes to make, and 40 minutes to bake, easy.

Natasha,
Just wanted you to know that I made this over the holidays and everyone loved them. They were very easy to make and your instructions are just PERFECT-- not too wordy unlike cookbooks, and straight to the point. The pictures helped too.

I hope you write more recipes that are just as easy to follow!
