Pan Fried Potatoes

Russian favorite potato dish. Pan fried potatoes are some of my favorite comfort foods, this dish brings back lots of good memories from my childhood.
Best to use firm potatoes like Yukon gold (others might be too mushy)
and fry in heavy bottom large skillet, cast iron would be perfect. Serve it with pickles and garlic aioli.

Yukon gold potato
black pepper

For aioli:
roasted pepper paste
sour cream
mushed garlic

Pill and evenly slice potatoes in quarter inch sticks.

Slice onion.

Slice mushrooms.

Season mushrooms with salt and  pepper.
On a high heat saute mushrooms on preheated pan.

Until golden brown.

Remove mushrooms, add oil and butter to the same skillet.

Add potatoes and leave them for 5 minutes on high heat. Do not disturb and do not season until browned (it is important).

Stir potatoes.

Mix in onions.

Add salt and pepper.

Let it fry for 10 more minutes stirring occasionally (every 2 minutes).
When potatoes are almost ready, add mushrooms and dill.

Close the lead turn, off the heat, and let it stand for 5 minutes.

Mix mayo, sour cream, garlic, and pepper paste.

Кто считает каллории... когда после съеденой порции любимого блюда становиться хорошо и уютно. Иногда можно себя побаловать. ;)

I usually fry the potatoes on their own. Occasionally add the onion and garlic, but have never thought of adding mushrooms :)
Thanks for the idea.

Oh, and another thing)) I never realized that people cut the potatoes on a cutting board, I thought that everybody did it by holding/cuping the potatoe in their hand))
